INGREDIENTS
- 3/4 cup King Arthur Whole Wheat Organic flour
- 1/2 tsp Argo baking powder
- 1/2 tsp Arm & Hammer baking soda
- 1/4 cup Stevia
- 1/2 tsp ground cinnamon
- 1/2 tsp ground ginger
- 1/4 tsp ground nutmeg
- Dash of salt
- 1 TBS PB2 with cocoa
- 1/2 cup unsweetened applesauce
- 5.2 ounces of non-fat plain Greek yogurt
- 1/2 tsp pumpkin spice extract
- 1/4 tsp orange zest
- 1 tsp lemon juice
- 1 TBS cold brewed coffee
Mix all dry ingredients together. Add the applesauce, yogurt and remaining ingredients. Mix well and divide evenly into a lightly greased 6 cup muffin tin. Bake at 350 degrees for 20 minutes or until a toothpick comes out clean.
These muffins only have 85 calories per muffin. You can add ingredients or substitute ingredients if you choose.
