DUMP MUFFINS

Sometimes I make muffins by just putting a lot of ingredients I have available in the bowl and stir. These are moist and yummy.

INGREDIENTS

  • 3/4 cup King Arthur Whole Wheat Organic flour
  • 1/2 tsp Argo baking powder
  • 1/2 tsp Arm & Hammer baking soda
  • 1/4 cup Stevia
  • 1/2 tsp ground cinnamon
  • 1/2 tsp ground ginger
  • 1/4 tsp ground nutmeg
  • Dash of salt
  • 1 TBS PB2 with cocoa
  • 1/2 cup unsweetened applesauce
  • 5.2 ounces of non-fat plain Greek yogurt
  • 1/2 tsp pumpkin spice extract
  • 1/4 tsp orange zest
  • 1 tsp lemon juice
  • 1 TBS cold brewed coffee

Mix all dry ingredients together. Add the applesauce, yogurt and remaining ingredients. Mix well and divide evenly into a lightly greased 6 cup muffin tin. Bake at 350 degrees for 20 minutes or until a toothpick comes out clean.

These muffins only have 85 calories per muffin. You can add ingredients or substitute ingredients if you choose.
