Peanut Butter Spice Muffins

Only 84 calories per muffin

INGREDIENTS:

  • 1/2 cup King Arthur Whole Wheat Organic Flour
  • 1/4 cup King Arthur Coconut Flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 cup Stevia
  • 1 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1/4 tsp ground cloves
  • 2 Tbs. PB2 powder with cocoa
  • Dash salt
  • 1 egg-lightly beaten
  • 1/2 cup unsweetened applesauce
  • 1/2 tsp pure Almond extract
  • 2 Tbs Amish Christmas jam
  • 1/4 cup water

Preheat oven to 375 degrees

Mix all dry ingredients in mixing bowl. Stir in the egg and applesauce and mix well. Add the last three ingredients and mix well.

Prepare a 6 cup muffin pan by greasing the bottom and sides of each cup. Fill each cup evenly.

Bake for 20 minutes or until toothpick inserted comes out clean.

Cool slightly and then place on a serving plate and ENJOY!

  1. I wonder how well this would work with either soy nut butter or sunflower butter. With a peanut allergy in the house, peanut butter is not on our grocery list ever. It does sound like a great recipe, though!!

  4. Who can go wrong with peanut butter! I also saw cocoa and well … that just takes it over the top. Love me some peanut butter and chocolate! These look yummy and more like a dessert than a muffin.
