Carrot Cake Muffins

Fresh out of the oven and looking very tasty

INGREDIENTS

  • 1/2 cup King Arthur Whole Wheat organic flour
  • 1/4 cup King Arthur Organic Coconut flour
  • 1/4 cup Stevia
  • 1/2 tsp baking soda
  • 1/2 tsp baking powder
  • 1 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1/4 tsp ground cloves
  • 1 egg-lightly beaten
  • 1/2 cup organic unsweetened applesauce
  • 1/2 cup grated carrot-about one large carrot
  • 1/2 tsp Almond extract
  • 1/4 cup water
  • Mix all dry ingredients in a large mixing bowl
  • Add lightly beaten egg and applesauce
  • Stir to blend well
  • Add grated carrot and mix well
  • Add Almond extract and water and mix well

Grease a 6 compartment muffin tin and fill each section equally. Then place in a preheated oven @ 400 degrees for 20-25 minutes or until a toothpick comes out clean

Cool and place on a serving plate. Each muffin contains 76 calories
