Sweet Potato Carrot Muffins

These muffins are both healthy and yummy

Sweet Potato Carrot Muffins

Ingredients:

  • ¾ cup 100% whole grain whole wheat organic flour
  • 1 tsp. baking soda
  • Dash of salt
  • ½ cup Stevia
  • ½ tsp. ground nutmeg
  • 1 egg-lightly beaten
  • 1 jar (4oz) sweet potato apple carrot baby food
  • ½ cup grated carrot (1 medium carrot)
  • 2 TBS. sugar free orange marmalade
  • ½ tsp. pure orange extract
  • Confectioners sugar
  • Mix all dry ingredients in a medium size mixing bowl. 
  • In a separate bowl, lightly whisk egg. 
  • Add baby food to the egg. 
  • Mix together and add to dry ingredients.
  • Add the grated carrot and orange marmalade.  Mix well.
  • Add the orange extract and mix well.

Preheat oven to 375 degrees F.

Lightly grease a 6-cup muffin tin.  Fill each cup evenly with mix.  Bake for 20-25 minutes or until a toothpick inserted comes out clean.

Cool and place on a plate. 

Dust with confectioners sugar. Each muffin contains 83 calories
